It's that time of year again, and I can't help but feel it began way to early this year! It's not very often we are combining in July... I mean seriously where did summer go?
I made my first harvest meal this week. I wanted something easy as I had some errands and things to do in the city an hour away, and knew I would be there most of the day. I prepped the filling for this pot pie in the morning, reheated before assembling and baked. Served it with corn on the cob, cheddar zucchini beer bread and a cucumber salad.
It was almost too beautiful to eat!
