Quick Pickled Beets

 Pickled beets during harvest are one of my go to additions to meals. They're easy to throw in my harvest supper bucket, along side my three day pickles.

When I first tried this recipe I had called my mom asking how long to cook the beets for, and she replied, "well you want the skins to peel off easy and you want them to have an bit of an "Irish Bite" to them". 



I had never heard of that before, and absolutely love how it sounds. Basically you want them to have a bit of a crunch to them and not be mushy otherwise they will turn to mush as they sit and pickle.
